We have 11 nights in this beautiful country. Plane lands in Split and thinking of spending half there and the other half in Dubrovnik. We are interested in history, food, cafes, and beaches. Would you spend more time in one or the other? We will be going to Hvar for a day trip. Should we spend a night or two there? Thanks!
Hey, Split is better option as it allows you to see much more around it, plenty of beautiful small towns or Island hopping with a ferry.

My suggestion would be to do 4 days in Split, 4 Days on Hvar or Korcula (Hvar is only better beacuse of positioning as its easier to visit Brac and Vis from there and Korcula is better if you want more quiet and sandy beaches) and 3 days in Dubrovnik.
From Split you can visit near by cities like Omis, Trogir, or National Park Krka or Plitvice if you dont mind longer drive, check the articles posted above.
From Korcula you can also do day trips to Mljet (Pomena) as there is a national Park located there great for exploring.

Regarding Dubrovnik as someone mentioned before it gets crowded, and it doesnt take long to sightsee so staying shorter is fine to do everything and still enjoy it. Here are suggestions on what to see and do while you are in Dubrovnik:
