Hey, for the first day you are able to see more in the town itself but the plan looks good, check this guide for inspiration: One day in Zagreb: Walking guide by a local
From day 2 you will easily cover Zrinjevac on the first day of exploring the city. So you can head directly to Maksimir from Glavni Kolodvor with tram if you dont want to walk through Zrinjevac again. Zagreb's most Charming Park: Maksimir (What to do and see)
Getting a night bus to Dubrovnik is a great idea, done it several times, just dont expect to be fully rested from bus sleep. Here are few guides for Dubrovnik that might help you but over all the itinerary is solid and easy to do.

Since you will be doing the walls I would suggest getting a Dubrovnik pass which for the same price gets you entrance to the walls, 1 bus ticket, free entrance to museums: Dubrovnik Pass: How to save money when visiting Dubrovnik (Guide)
